They will be preparing dishes directly from some of their favorite cookbooks, some old classics and others yet to be released. What better book to start with than Chef Virant's very own The Preservation Kitchen, and with a whole chapter dedicated to "A Beer Celebration," Aquanaut made for the perfect partner. Perennial Virant will be collaborating with Aquanaut founder and Master Brewer Eric McNiel on a limited brew featuring spruce tips and honey from Chef Virant's own bee hives.
