Walk inside the black steel door of Moody Tongue’s newly opened Tasting Room and you’ll instantly see why it’s unlike any other taproom you’ve been to. Open and modern, cozy and intimate, sleek and smart – the Tasting Room is a place where Brewmaster Jared Rouben wants each of his guests to feel comfortable.

“I’m a huge fan of hospitality and service. I want people to be able to walk in and relax,” says Rouben, who has been trained at both the Culinary Institute of America and the Siebel Institute—the latter of which he currently serves as a faculty member. The melding of his passions for food and beer come together at Moody Tongue with their culinary approach to brewing.

The Mid-century Modern inspired space sits adjacent to the brewery, which guests can peer into as they like. Exclusive beers like their Grapefruit Pilsner, Sour Wine Barrel Aged Steeped Emperor’s Lemon Saison, and Woodford Reserve Barrel Aged Barleywine along with their perennial favorites will be available on tap.

“I like to do one thing well and then executing that,” says Rouben. “As you can see from our menu, we’re just doing oysters, cake and beer. But we’re going to own those three things.” To be fair, though, this isn’t just any cake. It’s a 12-layer German chocolate cake that pairs nicely with Moody Tongue’s Applewood Gold or their Caramelized Chocolate Churro Baltic Porter.

As for the oysters, Rouben notes their saltiness and complexity as two characteristics which make them ideal for pairing. That, and the fact that they won’t fill you up. “For me it’s been important to think about how the guest feels when they walk in the door and when they when they leave the door,” says Rouben. “The last thing I want is for them to feel bloated or heavy—I want them to feel good about themselves.”
